I need to try this! Do you have a recipe you can share?
How careful do you need to be with Lye other than wearing gloves (I.e., drips etc)?

Any recommendations to get them to not stick to the parchment paper?

They look fantastic. Important question though: can you in any way cock up lye dipping and baking ending up burning your esophagus? That’s the only bit that prevents me from making 100% accurate pretzels

Is it hard making those from scratch? What would be the difference if u dont use sourdough ?
MountainGoatMadness
I made these last week and wasn’t a fan. I’ve made pretzels without lye or sourdough and they were awesome, so I can’t figure out where I went wrong. Dough felt great, looked great when baked, but they were too dense and chewy. I think I either overbaked by a couple minutes, dipped them in lye for too long, or maybe I just don’t like the texture of the sourdough in pretzels…?
How long do you dip yours in the lye bath? What’s the texture like compared to regular yeasted pretzels? How long do you bake/what temp?
Thanks!!

What ratio of lye to water do you use?
MissDryCunt
What ratio do you use for the lye solution?

I can never get mine to roll out long enough to tie into shape. Another request for your recipe.
