Chicken quesadilla is a mouth-watering Mexican dish that has gained immense popularity all around the world. This delectable dish consists of two tortillas filled with shredded chicken, cheese, and various other delicious ingredients like beans, peppers, onions, or guacamole.

Ingredients
4 medium whole flour tortillas
8 tbsp cheddar cheese shredded
8 tbsp monterey jack cheese shredded
1 small chicken breast chopped
1 small onion diced
1 small red bell pepper diced
1 small tomato diced
¼ tsp salt
¼ tsp pepper
1 tbsp olive oil

Instructions
1. Slice the chicken into strips, and chop the onion, red bell pepper, and tomato into small pieces.
2. Heat a pan over medium-high heat and add olive oil. Cook the chicken for 4 minutes, season with salt and pepper, then stir for another 2 minutes until fully cooked. Remove from heat and set aside.
3. Place a flour tortilla on the hot pan or griddle without oil. Heat each side for about 2 minutes.
4. Evenly sprinkle shredded cheddar and monterey jack cheese onto the tortilla, then add the cooked chicken mixture on one half.
5. Fold the tortilla in half to form a semi-circle. Cook for 1 minute until golden brown and the cheese melts, then flip it over with a spatula.
6. Once all quesadillas are ready, allow them to cool for a minute or two before slicing into halves or quarters.
7. Serve the chicken quesadillas with salsa, guacamole, and sour cream.
