Noodles with lots of veggies, 304 kcal

    * 400g Udon noodles

    * 3 tbsp oil

    * 2 big cloves of garlic

    * 400g mushrooms

    * 1 big carrot

    * 3 bell peppers (1 red, 1 yellow, 1 green)

    * 2 bunches of scallions

    * 2 tbsp peanut butter

    * 1 tsp smoked paprika

    * 2 tsp cilantro

    * 2 tsp onion powder

    Sauce:

    * 320mL vegetable broth

    * 2 tbsp agave sirup

    * 7 tbsp soy sauce

    * 4 tbsp rice vinegar

    * 2 tbsp cornstarch

    Recipe was mostly this:  https://elavegan.com/de/gebratene-asia-nudeln/#recipe (it’s in German), but with double the amount and some added spices (and I sautéed the veggies for longer because my pan was pretty full 😀 )
