I put this loaf together last night, did one set of stretch and fold, and then I completely forgot about it until this morning!
Looked proofed enough (kitchen was super cold last night), so I shaped it and threw it in the fridge while my oven was warming up. Baked at 440 for 20 min with lid on and at 410 for 25 minutes without lid, super happy with the crust and crumb!

Recipe:
150gr starter
300gr water
500gr all purpose flour
8/10gr of salt

    Bread is easy. People over complicate the process for these perfect atrisan loaves they can share on social media, but bread is easy. We’ve done it for THOUSANDS of years. Good looking loaf, nice ear too
