Vegan kimchi doesn’t have shrimp paste. It will be fine.

I just don’t. One of my kiddos is a vegetarian so I usually just skip a lot of the fishy stuff for him and it tastes fine

I usually use fish sauce instead of shrimp. You can certainly just leave it out, though.

I use fish sauce. It seems to round out the flavor to me. That gochu is very dark or is it just me?

my halmeoni has been making kimchi for 50+ years without shrimp paste or fish sauce and it is still the best kimchi i have ever had. what’s more important is the quality of the vegetables and salt, correct salt and water ratios, and perfecting your fermentation times.
