Enjoy this delicious and warming soup. The recipe is easy to follow

Ingredients (for 5-6 servings):
3 small or 2 large carrots
2 small parsley roots (optional)
2 large potatoes
1 celery stick
1 small zucchini
2 yellow or 1 yellow and 1 green bell pepper
1 chili pepper
handful of chives
14.5 oz (400 g) canned tomatoes
50 oz (1.5 liter) chicken or vegetable broth
½ cup quinoa
5 thin slices of bacon
1 tsp ground oregano
1/2 tsp dried basil
1 tsp ground sweet paprika
Salt and pepper to taste
Handful of chopped parsley

Instructions:
1. Peel and dice 3 small or 2 large carrots and 2 small parsley roots. If you don’t like parsley, you can omit this ingredient
2. Peel and dice 2 large potatoes
3. Slice 1 celery stick into small pieces. If you don’t require low FODMAP version of this soup, you can use 2 or 3 celery sticks
4. Peel and dice 1 small zucchini
5. Remove the seeds and dice 2 yellow or 1 yellow and 1 green bell peppers
6. Place all diced vegetables in a bowl
7. Cut 1 chili pepper into small pieces and cut a handful of chives into tiny strips
8. Heat up a large pot (at least 5-quart or 4-liter capacity) with 2 tbsp garlic-infused olive or canola oil
9. Fry the chili pepper pieces and chives for 2 minutes, stirring constantly
10. Add the remaining vegetables and fry for 5 minutes, stirring constantly
11. Add 1 tsp ground oregano, 1/2 tsp dried basil and 1 tsp ground sweet paprika
12. Add 14.5 oz (400 g) canned tomatoes and 35 oz (1 liter) chicken or vegetable broth. You should save ½ liter broth for later and add it if the soup would be too dense
13. Prepare an empty glass and pour 1/2 cup quinoa grains, rinse it in hot water and drain
14. Put the quinoa into the soup and add 1 tsp salt
15. Boil the soup for 20 minutes with the lid on
16. Chop finely and fry 5 thin slices of bacon in a separate pan without any oil
17. Put the bacon into the soup. Mix everything and boil for 5 more minutes
18. Add salt and pepper to taste. If necessary, add more broth (I didn’t save any additional broth and my soup was too dense)
19. Serve with chopped parsley
20. Enjoy your meal!
