Happy Halloween everyone.

I have a question about what everybody's doing for sealing their beans. I recently got a vacuum sealer and it's working well but I'm wondering if people are storing beans and vacuum sealing mason jars. If you are, how well does it work? I'd like to be able to open and reseal them. How successful is that working for you who are doing it? Thanks

I use a foodsaver attachment to seal Mason jars reusably.  Works just fine for me.

I use airscape canisters. But I only have a couple of pounds on hand at any one time.

Works great. I only un-vacuum to single dose then vacuum the jar again. These are beans I’ve roasted that will be consumed within two weeks.

If I want to “store” beans, like to hold them while I’m on vacation I use a bag and put them in the freezer. When I take them out of the freezer they go into a jar.

I was considering vacuum sealing mason jars, but ultimately decided to stick with my routine of vacuum sealing bags of beans (around 200-250g to accommodate my hopper for a few days) and storing them in the freezer.

In my experience storing roasted beans under vacuum pressure actually age them quicker.

I vacuum seal and freeze a 5kg bag in ~160g portions, then I defrost over night, fill ~8 vials with 18.5g of beans, and the leftover goes into an Airscape

I do 50ml centrifuge tubes in the freezer with 18g doses. Have some beans around 12 months old, still good.

I vacuum seal it in my mason jars.

I’ll be honest, I just use the bag that the roaster gives me, 99% of the time there’s a one-way valve so seal up & squeeze out the air. Good enough for me.
