    I had to look up “cold oven baking”. It turns out to be a not-so-amazing practice of putting the bake into the oven without preheating. That allows the riser in the batter or dough to continue doing its work while the outside is still pliable. So the cake is less likely to crack when the pressure from the rise gets too high.

  12. I’d like to try this but my convection oven runs the fans and both elements at full tilt while preheating. I cannot disable this and I worry that it would incinerate the top of the cake. 😬

    i just made one of his recipes yesterday! the strawberry fluffies. my sibling said it tasted like cereal, in a good way(?) tho. I don’t think i’d make it again, i didn’t have a fancy ice cream scoop so scooping out that ridiculously sticky dough was a nightmare
    but it has a great chew to it so still a decent cookie. definitely needs milk tho.

    my mama used to bake a certain cake (might have been a pound cake, not sure) in a cold oven.

When i started backing (12-13ish) i was making a cake from scratch while my aunt all ready had the oven on cooking supper, she turned the oven off, i didn’t realize it and put the cake in, after about 20 minutes later she realized it, mentioned it to me, turned the oven on and watched it closely, checking it frequently with a toothpick, took it out and that cake(9X13) had raised so much it was 1-1.5 inches taller than the glass cake pan in the center, it had perfect air bubbles in it, and wasn’t over baked, best cake I’ve ever made.
