    **Sautéed Veggies In Tomato Sauce**

    **(6 servings)**

    **Ingredients**

    * 200g mushrooms (champignon/oyster/shimeji/any kind)
    * 250g frozen green beans
    * 1 zucchini
    * 250g chickpeas
    * 2-3 cups crushed tomatoes (or grated tomatoes/passata)
    * 3-4 tbsp tomato paste
    * 2-3 tsp salt
    * 1/2 tsp each: garlic powder, turmeric, smoked paprika, organic cocoa powder
    * Juice of 1 lemon
    * Olive oil (frying)

    **Method**

    1. Cut mushrooms and zucchini into medium pieces.
    2. Heat olive oil (2 tbsp) in a deep pan (medium-high heat).
    3. Add mushrooms and fry until golden.
    4. Add zucchini and fry until soft and browned.
    5. Add green beans and chickpeas, stir for 3 minutes.
    6. Add tomato paste and spices, stir for 1 minute.
    7. Add crushed tomatoes, mix well, cover for 2 minutes.
    8. Stir and cover again.
    9. Ready in 10 minutes.
    10. Squeeze lemon juice, mix, and serve with rice or bread.
