For the pasta: 2 cups orzo or other pastina 4 cups water or broth 2 tbsp butter 1 cup of parmesan Melt the butter in a large saucepan or dutch oven over medium heat. Add in the uncooked orzo and mix to coat the pasta in the butter. Saute until the pasta is slightly golden brown. Add in the broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes or until all of the liquid is absorbed. Remove from the heat and in a little more stock to reach your desired consistency. Mix in the parmesan and serve with your desired vegetables! For the crispy mushrooms and shaved brussels sprouts: 1 package shiitake mushrooms 1 bag brussels sprouts 1 tsp garlic powder 1 tsp salt 1/2 tsp freshly ground black pepper Thinly slice your mushrooms and use a mandolin to shave your brussels sprouts.
