I thought it might be fun now that the weather has cooled and most of us are past canning season to share how we are using our canned goods.

Today I made a quick meal using a jar of bruschetta topping, some quick pickled red onions, some bulgur, a couple of big handfuls of kale and a can of beans. The bulgur took about 12 minutes to cook in the microwave, and assembly for the rest was a whole 5 minutes.

I was iffy about the idea of canning the bruschetta topping. I had a feeling the texture wouldn't hold up and I was right. It was delicious but mushy. But it worked great for adding both tomatoes and seasoning to a grains and greens salad and made a filling lunch with minimal effort. The only thing that would have made it better would have been fresh radishes but my fall garden isn't producing yet.

What are your favorite ways to use canned items to make quick meals that the rest of us might not have thought of. Please share!
