Recipe
* 250 gr. of brown lentils
* 1 lt of water
* 50 gr of olive oil
* 2 dry onions
* 2-3 cloves of garlic
* tomato pulp from 2 tomatoes
* 200 gr. of ready made tomato pulp
* 2 vegetable cubes
* some wine
* 2 bay leaves
* some oregano
* 1 lemon
* salt – pepper
Boil for approx. 45-60 min. in medium heat, until the lentils are done.
Procedure
Before cooking, the lentils do not need soaking. They must simply be rinsed. I put the dry onions and the cloves of garlic in the mixer before using them in the soup. In case you want more water in your soup, please add some hot water during the boiling according to your personal preferences. I put the lemon juice at the end of the boiling procedure, so that it doesn’t lose its flavor. For the same reason I use wine to add extra acidity to the dish. However, because the wine contains alcohol, it should be added at the beginning, so that the alcohol evaporates during the cooking procedure.

Fakes is a traditional Greek lentil soup made during the fasting (and not only). The soup is made with brown lentils (big or small) and accompanied by feta cheese, olives, and bread. Minced meat is sometimes added in the soup in some parts of Greece. In general, Greek people use many different varieties of lentils, but mostly brown. Yellow split peas are used in another similar dish (in terms of ingredients), called fava.
