Spicy Shin ramen with cabbage omelet

    Recipe as requested, it was very simple, and wasn’t intended to be authentic in any way:

    **For the omelet (it was made mild to counter the ramen spice):**
    – Whisk 2 eggs, ~100ml milk, s&p, fish sauce, msg, garlic powder, onion powder, put aside mixture
    – Chop half a red onion, dice a garlic clove, shred 2 handfuls of savoy cabbage, shave 1/3 parsnip (with a peeler)(parsnip added a nice subtle sweetness, similar to carrot)
    – Fry vegetables in olive oil
    – Add egg mixture, fry and flip omelet till done

    **For the ramen:**
    – Add ramen broth & vegetable packets, a sliced hotdog, 1/2 handful of shredded cabbage, ~300ml homemade vegetable stock (I make in bulk and freeze) to a saucepan.
    – Bring to boil and add noodles
    – Cook down till noodles done, add water when/if necessary
