I LOVE sea urchin. When I was young in Thailand, I used to play with the fishermens' children near our holiday beach house. Every season, there would be huge influx of sea urchins and my friends taught me how to get them out of the sea and crack open the urchins for their tasty flesh. We had a bag of limes and ate them raw. Plenty of oysters, too. Those were the best days of my life, no computers: life in nature. This brings back memories, oh so long ago. Thank you.
Wonderful vid again, really love this content. Lots of folks, over the years, do film recipes being done in working chef's kitchens but these are really special, you can follow the recipe, see a great chef working and have enough information at the end, regardless of any need for translations, to repeat the dish in your own home kitchen. I see I need to work on my presentations for example, and I don't always have all the ingredients but a pasta dish with seafood of various types is always a great choice and a favorite of mine. Thanks so much for doing these vids, please never stop, particularly the Italian ones; there must be a "few more" superb restaurants in that great culinary county to visit and film!! : )
