    But. . .

    REAL Cacio e Pepe is so easy to make – much less complicated than this. 😊 (My Italian Mamma-in-law just frowned and said a little exclamation to Dio! 😂)

    I can understand that to speed-up food production in a busy restaurant this might be an efficient short-cut to avoid making it properly-fresh for each order….

    But at home ??

    Some things cannot be improved upon. ❤

  4. If one has all the ingredients on hand, not too complicated. Just a few ingredients. Simplicity really makes flavors stand out. Light creamy/cheesy with fresh ground black peppercorns; my father would love this!
    So, pasta has a personality. A strong one in this case as you had a conversation with it. I would be saying, “Yummy pasta, you are so tasty. So fresh. Yummy”!!!
