REAL Cacio e Pepe is so easy to make – much less complicated than this. 😊 (My Italian Mamma-in-law just frowned and said a little exclamation to Dio! 😂)
I can understand that to speed-up food production in a busy restaurant this might be an efficient short-cut to avoid making it properly-fresh for each order….
But at home ??

If one has all the ingredients on hand, not too complicated. Just a few ingredients. Simplicity really makes flavors stand out. Light creamy/cheesy with fresh ground black peppercorns; my father would love this!
