Went with super easy sugar cookies since I got two littles at home! Started with 1 cup soft butter and 1 cup sugar, mixed until all fluffy, then added one egg and splash of vanilla (around teaspoon, you know?). In other bowl, mixed 2 and half cups flour, half teaspoon baking powder, pinch of salt, then slowly added to butter mix until it made nice dough.

Rolled it out and cut little pumpkins, then baked at 350°F for 10 minutes or so—just until edges look golden. For icing, I mix 1 cup powdered sugar with tiny bit milk (maybe 1-2 spoonfuls) and add food coloring—red and yellow for pumpkin vibe! My 4-year-old was in charge of decorating (and, you know, testing sprinkles), while I balanced baby on hip. Not perfect but so cute!

  2. My kids are now 2 and almost 4, and the idea of making Pillsbury cookies with them makes me anxious. So props to you for making from scratch cookies with all of that going on!
