1 c cream of coconut (like coco Lopez)
2 c oat milk coffee creamer
1 vanilla bean
2-3 tsp cornstarch
About 4-5 chopped and peeled peaches
1/4 c sugar
Juice of one lemon
Pinch of salt
1 tsp vanilla extract
Make the peach purée by heating peaches, sugar, and lemon juice in a pot over medium for 5-10 minutes, until peaches are reduced and softened. Let cool, then purée.
Combine the coconut milk, 1 c of coconut cream, and one vanilla pod, cut in half and seeds spooned out and added to the base. Heat until just under boiling, cover and let steep for one hour.
Mix equal parts cornstarch and water, combine into a slurry. Add to the base, heat on low-medium heat until the mixture thickens into a custard (this will happen suddenly around 10 or so minutes) strain mixture into remaining creamer, add salt and vanilla. Add peach purée and stir to combine. Let chill then let churn
