* 1 mango, peeled and halved (1/2 for roasting, 1/2 fresh for blending)
* 2-3 pieces of pineapple (about 6 cubes)
* 4 roma tomatoes
* 1/5 red onion
* 1 habanero pepper
* 1 jalapeño, deseeded if desired
* 1 poblano pepper
* 1 garlic clove if roasting. 1tsp minced if not
* 1 red bell pepper
* Fresh cilantro, chopped about 1/3 bunch
* Juice of 1/2 lime (about 1TBS)
* Splash of pineapple juice
* Salt and black pepper, to taste
Instructions
1. Preheat the Oven: Set your oven to 400°F (200°C).
2. Prepare for Roasting: Place 1/2 of the mango, pineapple pieces, tomatoes, onion, habanero pepper, deseeded jalapeño, poblano pepper, garlic, and bell pepper on a baking sheet with foil.
3. Roast: Place the baking sheet in the oven and roast for 10 minutes. After 10 minutes, remove the mango, pineapple, peppers, and garlic. Leave the tomatoes and the red onion in the oven for another 10 minutes to continue roasting.
4. Blend the Salsa: In a food processor, combine the roasted ingredients with the fresh mango half, cilantro, lime juice, a splash of pineapple juice, salt, and black pepper. Blend to your preferred texture.
5. Chill: Transfer the salsa to a container and refrigerate
