Meat curing Info:
1.Curing gives meat, a rich, tasty, savoury flavour.
2.Meat is cured to prevent spoilage, tenderise and to give it lots of taste.
3.Curing removes moisture from the meat through osmosis, making it unfavourable and hostile for bacteria to grow.
4.Curing can make tough cuts of meat, like brisket, very tender.
5.Curing gives beef an appetising deep red colour.

  1. I think I would get also some pepper into the cooking process, just to boost the flavour just a bit more. Put this on just slightly roasted sourdough or rye bread, a hint of dijon mustard underneath… Sounds already delighful.

  4. Adding this to the list of things to try. Usually do a smoked brisket once a year and this would be a great use of the trimmings. BTW, my wife wandered in and exclaimed that you sounded exactly like Winnie the Pooh. Now I can't unhear it myself.

  5. I’m afraid I can’t stand canned corned beef. I never liked it. It may stem from one day in Dubai at school in 1982, my mum made me corned beef sandwiches. I ate them for lunch and by three pm I was running out the classroom and projectile vomiting into the dessert sand. I went home and told my mum and she gave it to the dogs. Less than a couple of hours later, all the dogs were wretching in the garden. I haven’t touched it since. I prefer the American style whole brisket corned beef.

  9. This looks incredible and I cant wait to try it! I live in a region where 'curing salt' might be hard to come by. Can I just use regular old sea salt or the like and get the same results without the curing salt?

  10. You had the basis for proper canned corned beef before you turned it into mush. I have no idea how we accept the crap sold in the UK when elsewhere it's recognisable as beef and tastes 10x better.

  12. I don't know how common Reuben sandwiches are in Britain, but it is the highest and best use of corned beef. Corned beef, sauerkraut, Russian dressing, and Swiss cheese all on good rye bread (and contrary to popular opinion is is possible to find good bread in the US, although not all over the place like in Germany). Probably the greatest single contribution from Jewish-Americans to our national cuisine, although ironically because it mixes meat and dairy in a single dish it isn't kosher.
