It looks like slop I know but hear me out. Was super filling and didn’t leave me feeling peckish (see what I did there cause of the eggs)

I’m not a big cottage cheese fan but have started to integrate it into my life through scrambled eggs. Also there’s a lot of room to add in more veggies or remove the meat if you’re not into that.

I live in CA

Ingredients:
Eggs (I usually get my eggs from my farmers market but if not I’ll get them from Costco since I use them for breakfast or boil them for post workout snack)

Cottage cheese (purchased from Costco to encourage me to use it all and not waste since it’s a large container lol) plus think of the protein

Spinach (I don’t purchase this in bulk and instead get a fistful from the grocery store that should last me 3-4 days)

Canadian Bacon (uncured canadian bacon fully cooked, get it from Costco, lasts a long time in fridge, perfect if you need/want to add some meat to your breakfast or snack for 60 cals for 3 slices, which is filling since the slices are a bit thicker than you’d think)

Grape tomatoes (purchased in bulk from Costco cause I also like eating these as a snack throughout the day. But I took a handful and sliced them in half before adding to the scramble. Not gonna lie, I’m a texture freak and I wasn’t a big fan of how cooking the tomatoes took a lot of the juices out, so next time I’ll probably save the tomatoes for after the scramble is done and mix it in after to keep some of the crunch)

Sriracha (hot sauce of your choice, I’m not a big ketchup fan but I love hot sauce. Got this at my local grocery store)

My goals are to have more fulfilling meals that are lower calories. I’ve struggled with BED and have been on a wonderful streak of working out and cooking my own meals. I hope to post more recipes and stuff in the future.
