Taco Tuesday:
Ingredients:
* Chickpeas
* Red Beans
* 4 Mini Tortilla Wraps
* Shredded Red Cabbage
* Rosa Tomatoes
* 1 Grated Carrot
* 1/4 teaspoon ground cumin, paprika, coriander, dried thyme, oregano.
*Olive Oil
* Sliced Cucumber
* BBQ Sauce
* Mayonnaise Sauce

Pita Bread, Chicken Meatballs & Tzatziki Dip
Ingredients:
Chicken Mince:
* 4-6 Skinless Chicken Fillet Chopped (250g mince)
* 1/2 Onion Finely Diced
* 1 Garlic Clove Chopped
* 1 Large Egg Beaten
* 1/4 Cup Breadcrumps
* 1/2 Teaspoon Ground Cumin
* 1/2 Teaspoon Ground Coriander
* 1/4 Teaspoon Ground Paprika
* 1/4 Teaspoon Dried Oregano
* 1/4 Teaspoon Dried Thyme
* 1/4 Teaspoon Salt
* 1/4 Teaspoon Black Pepper
* 1 Teaspoon Olive Oil

Ingredients: Tzatziki
* 300g Plain Yoghurt
* 1 Small Cucumber Grated (Strain all the cucumber juice)
* Chopped Mint (leave a couple of leaves not chopped for garnishing)
* Salt & Pepper

+ Mix the yoghurt with grated cucumber and all ingredients and keep refrigerated
+ Add olive oil & mint leaves as toppings

Method: Chicken Meatballs
+ Grind chicken in blender for 1-2 seconds three times until it resembles mince
+ In a bowl add the blended chicken mince, onion, garlic, spices and dried herbs and mix together . Add breadcrumbs & eggs after then mix until you get a pasty mix.
+ Shape 12-15 meatballs with your hands and place on a greased baking tray/ baking paper
+ Bake for 15-20 minutes in the oven at 180°C. (Adjust according to how done the meatballs are)

+ Toast the pita bread until warm and stuff your favorite veggies in the pita, add tzatziki dip and meatballs on top.
+ Leave some tzatziki dip for extra dipping

Tortilla Pizza
Ingredients:
* 2 Tortillas
* 4 Eggs
*1 Tomato
* ¼ Teaspoon Salt
* Pinch of Cayenne Pepper
* Mozzarella Cheese
* 1 Teaspoon of Olive Oil
*Chives For Garnish (optional)

Cheesy Quesadillas
Ingredients:
* 2 potatoes grated
* 2 eggs
* 2 tortillas
* 1 cup mozzarella cheese grated
* 2 tablespoons chives chopped
* 1 avocado mashed
* 1 tomato sliced
* Quarter teaspoon salt
* 1 tablespoon avocado oil & unsalted butter

Tortilla Wraps
Ingredients:
* 1 boiled egg/any protein substitute
* ¼ cabbage shredded
* 1 carrot grated
* Beef pastrami slices (use bacon, mince or ham)
* Baby spinach
* Chives for garnish

Tortilla Sandwiches
Ingredients:
* 2 Tortillas
* 2 Eggs
* 1 Tomato
* 2 Smoked Ham Slices
* 2 Teaspoons Olive Oil
* 1 Teaspoon Unsalted Butter
* Baby Spinach
* Steamed Mixed Vegetables
* Half a Cup Mozzarella Cheese
* Chives
* Mayonnaise

Potato Tortillas
Ingredients:
* 4 Tortilla Wraps
* 3 Potatoes Peeled
* 1/4 Onion Finely Diced
* 1/2 Cup Parmesan Cheese (Any Cheese)
* 1 teaspoon Unsalted Butter
* 1/4 Cup Mayonnaise
