Ran it about 215 all night in the freezing rain, until it hit 165 or so and I cranked it up to 250. Seasoned with a sweet rib rub and SPG. Spritzed with ACV after the bark was set.
I wish I got a better pic of the finished product! This has been the best one I’ve done in a while.

That looks good. Picked onions, radish, lime and clintro will make some good tacos.
Water pan or no water pan?
That looks de-lish! The one downside to a no-wrap is not being able to add brown sugar and a littke more rub in the aluminum foil wrap.
I did an 8 lb. last week with no wrap. Overnight on a Traegar. Took 12 hours total. 250° until 165F, then finished at 275F until it hit a 203F internal temp. Overnight temps in mid 30’s (in far southern AZ). Excellent bark, great smoke flavor throughout, moist but not greasy (virtually all fat was removed b4 the smoke).
It’s so much better when it’s not wrapped.
