    These look amazing. Garrison has some tater tots that look similar but no layers. They are pretty tasty from what I remember.

    I’ve had this style at tiki tatsuya and better half, but I think both of them were with taro,  not potato. But if you’re craving that texture check there!

    The dish is hard to make, it’s more of an appetizer. Don’t know where to find as it’s a French dish. Look for resort/ hotels.

    Similar flavor profile is Lyonnaise Potatoes if you can’t find Pavé. Done correctly they are crispy outside and soft inside. Easier to make.

    Your house? They are just thinly sliced potatoes with a couple of more steps. You’ll need a mandolin for cutting the potatoes properly but that’s a useful tool for prepping other things. The recipe isn’t hard.

    This isn’t in Austin, but Butcher’s Cellar in Waco has a 1,000 layer potato that’s like this.

  26. One time I went to an Austin restaurant because they listed this “potatoes pave” on their menu. I was SO excited. And it was a whole to-do to get to this place. So I put in my order and 20 minutes later my plate arrives with…regular ass hashbrowns. The restaurant closed recently. Karma is a bitch. I’d ALSO like to know where to get these ever elusive potatoes.
