Goose is traditional autumn food here in Austria. This was at an upscale “mediterranean inspired” restaurant this weekend.
Having the full menu was a HUGE mistake. We were so full but it was so yummy.
– pumpkin and sage dip with homemade bread
– goose offal soup with a pretzel dumpling (that was the mistake, the soup is very creamy and rich, and it was a massive pot)
– 1/4 goose with chestnut & pear red cabbage and a fluffy semolina dumpling
– rum plums and “pumpkin spice” tiramisú
One “Ganslesen” down, two more to go!

Look amazing
Your goose looks delicious, although my grandfather was Austrian we never ate goose … I had to ask my mother to cook one when I was a teenager to try it. You goose looks better than my Mom’s🤤👍😊 Adding pear to red cabbage is interesting and I’ll have to try it as I normally add apples
