It’s likely not fat, it looks more like coagulated protein, which is harmless…just unsightly. You can alleviate that by using a finer mesh strainer next time. I actually have a strainer that is made of fine mesh similar to a permanent coffee filter basket but larger…that seems to get rid of most of those floaties.
