There is a recipe there for pickled carrots and daikon I would like to try, it’s a water bath recipe and uses equal parts water and vinegar.

Healthy Canning is a favorite source around here, they use recipes directly from Ball/Bernardin, the NCHFP, and extension services. That particular pickle recipe is delicious.
My only comment on this is not to treat the Star Anise as optional. You can’t tell it’s there, but you can tell when it’s missing. I’ve never added pickle crisp nor chile flakes.
(I used the version that’s in Ball Complete- which is identical to the Bernadin book, which is referenced as the source)
