My unholy union of leftover brines from four different lacto-fermented hot sauce projects this year. The four batches: Aji Lemon Drops + Strawberry, Habanero + Marionberry, Trinidad Scorpion + Blueberry, and Carolina Reaper + Raspberry.

The brine is an amazing condiment as well as a cooking ingredient, a small dash adds loads of flavor. The spice is powerful, but not as strong as you’d expect it to be given the peppers that went into it.
