Ingredients for 2 servings: 600 grams of pumpkin (measured when raw and peeled), 160g flour, 1 egg, salt, thyme, butter, sausage.
Cook the pumpkin in the oven, then let it cool, blend it, and add the flour, egg and thyme. Add the salt to boiling water and drop the spätzle using a spätzlehober (or also a potato masher if you can’t find it) cook until they float and drain into a bowl with some butter. Add the sausage, parmesan and enjoy!
