Ingredients

1 lb Italian sausage
1/2 pound pasta – Rigatoni
14 oz marinara sauce
1/2 tablespoon olive oil
1 small yellow onion diced
3 garlic cloves minced
1/2 teaspoon red pepper flakes optional
1/4 cup vodka
1/2 teaspoon kosher salt
1 cups water
¼ cup heavy cream
¼ cup parmigiano reggiano grated
¼ cup Parsley chopped

Instructions
Brown loose sausage, add onions, garlic, red pepper flakes. Add marinara. Add vodka and cook for 2 additional minutes.

Add pasta, water, and salt. Stir well, making sure to push most of the pasta under the liquids. Layer over the marinara (from your frying pan) and DO NOT mix. Close the Instant Pot and pressure cook for 6 minutes followed by Quick Release.

Test pasta, add another minute of IP if the pasta is not done enough for you. Otherwise stir in cream. Add parsley. Mix well and serve hot with grated cheese.
