Just lit my first snake, its way bigger then i need for just ribs but I figure it will be good to learn and i can always put it out when the food is done. How does it look.

Move those wood chunks closer to the hot coals as 2 of 3 are not going to do anything for the cook. Ribs will take smoke for the first 2 to 3 hours and the snake may not even get to the 3rd.

I would double the amount of starting coals (12 or so), otherwise it’ll take forever to get up to temp.

No, you give it time and enough heat for the lumps to release gasses. Never had funny tastes in my cooks.
