PASINDAY RECIPE (Pakistani BEEF STEAK RECIPE):
You will need to get Undercut Beef slices from your butcher.

Ingredients:
1kg undercut beef slices
1 cup fried onions
1 tbsp Garam masala
2 tsp Chaat masala
2 tsp Red chilli flakes
1 tsp Red chilli powder
1/2 tsp Turmeric powder
1 tbsp Ginger paste
1 tbsp Garlic paste
1 cup Yogurt
1 small onion sliced
2 tsp onion
1/4 cup oil

Method: Marinate the meat with all the ingredients except oil.
Add oil in the pressure cooker and 1 by 1 lay the beef slices. Cook in pressure cooker for about 20minutes on low heat or until tender and oil has separated.
If you have no pressure cooker then slow cook the meat in a covered pan for 1-2 hours.

Boneless ACHARI CHICKEN HANDI RECIPE:
1/2 cup mustard oil
2 tsp saunf (fennel seeds)
2 tsp kalonji (nigella seeds)
2 tsp zeera (cumin seeds)
2 tsp methi dana (fenugreek seeds)
4 onions chopped
2 tbsp garlic paste
2 tbsp ginger paste
6 green chillies chopped
2 fresh tomatoes
1/2 tin of tomotoes
2 tsp red chilli powder
2 tsp cumin powder
2 tsp coriander powder
2 tsp salt
vinegar 1/4 cup
bullet green chillies 4-5
1kg boneless chicken cubed
Chaat masala

Method:
1) Heat the handi, add your oil, followed by saunf, kalonji, zeera, methi dana, after one minute add your onions and cooked until light brown. Add ginger garlic paste, and green chilies. After one minute add tomatoes followed by red chili powder, cumin powder, coriander powder and salt. cook on low heat slowly till oil separates.
in a separate bowl, add your vinegar, slit your bullet green chilies and soak them in the vinegar for 10 minutes, then remove from vinegar, discard vinegar. stuff chaat masala into the green chilies.
once oil separates add your chicken and cook until the chicken is cooked and evaporates, and masala is a nice thick consistency. garnish with ginger sticks.
