30 Strips cooked as a thank you meal to for some volunteers who helped throw sod and straw to update my church’s landscaping.

Kept it simple, kosher salt front and back, let sit, pat dry, get the grill as hot as it’ll go, throw the steaks on until 135° internal, flipping at 120°, take them off and tent until ready to serve.

It didn’t go much over 400°, so my sear is not quite what I was hoping for, but the overall flavor and doneness were perfect.

    Those guys worked for money. Probably heathens. I would have appreciated 30 fine steaks more than them. You made the wrong choice.
