Ingredients

Raw Quinoa – 1/4 cup
Water to boil the Quinoa- 2 cups
Garlic Clove – 1
Salt – 1 tsp

For the Grilled Veggies
Olive oil – 1 tsp
Broccoli (blanched) – 8-10 florets
Red and Yellow Bell peppers Diced – 1/4th cup
Chilli flakes – 1/4 tsp
Mixed herbs – 1 tsp
Onion chunks – a few

For the Dressing
Extra Virgin olive oil- 3 parts
Balsamic Vinegar – 1 part
Salt & Pepper to taste
Honey to taste
Mustard sauce to taste

To top with
Feta Cheese

Method
-Boil water in a pot, then add quinoa, a pinch of salt, and a garlic clove.
-Cook until you see small rings appear on the quinoa grains.
-Drain and set aside.
-Heat oil in a pan until hot. Add broccoli and bell peppers, and toss quickly.
-Season with chili flakes, mixed herbs, and a little salt. Toss again.
-Add the onions and toss briefly.
-Keep the heat high and toss until the veggies are just tender but still crisp.
Remove from the pan and set aside.
-Combine all dressing ingredients in a jar. Shake well until mixed.

Assembly
-In a large bowl, combine the quinoa, grilled veggies, and dressing. Toss well to mix.
-Top with crumbled feta cheese, and it’s ready to serve.
