RECIPE //
1lb boneless, skinless chicken breasts (cut into thin strips)
1 red bell pepper (cut into strips)
1 yellow bell pepper (cut into strips)
1 orange bell pepper (cut into strips)
1 red onion (cut into strips)
3 cloves minced garlic
3 Tbsp olive oil
flour tortillas

SEASONINGS //
2 tsp chili powder
2 tsp ground cumin
2 tsp dried oregano
1 tsp paprika
1/2 tsp salt
1/4 tsp pepper

OPTIONAL TOPPINGS //
shredded cheese
chopped lettuce
sour cram
guacamole

-Preheat oven to 425 degrees. Lightly oil a sheet pan or coat with nonstick spray.
-In a small jar or bowl, combine chili powder, cumin, oregano, paprika, salt, and pepper.
-In a ziplock bag, add bell peppers, onion, garlic, and chicken. Pour in olive oil and shake to coat.
-Add seasoning mix and shake to coat.
-Dump the contents of the bag onto a sheet pan and spread in a single layer.
-Place into the oven and bake for 20 minutes, flipping everything half way through the cooking time.
-Serve with tortillas and toppings of choice.
-Enjoy!
