The orange paste is called mentai at the restaurant. Do Japanese grocery stores carry this? (In a paste type form)

    Yes. Mentaiko is popular in Kyushu. You can buy it as a garnish at most supermarkets in Japan.

    If you’re in Fukuoka, definitely. Other parts of Kyushu, a solid maybe.

    If you can swing the natural form of mentaiko in the fish row sack is best. When it’s in a tube it’s packed with preservatives and added salt.

    Mentaiko is the spicy version where tarako is the non spicy version.

    Just ask for mentaiko. It will be in the fish section of any supermarket. You remove the outer membrane of the sac and just add the preserved roe to whatever as you like. There will also me boxed single serving pasta sauces with the rest of the pasta sauces.

    Yep they have it all over readily available. Go to Fukuoka if you really like it

  6. in case you’re not aware, the stuff in the plastic tube/pouch isn’t much different from the stuff you get in its natural roe sack.
