I sauté the red onions with the potatoes after they are partially cooked, And add jalapenos together, then top with cheese at the very end to melt it, and add sour cream or yoghurt on top if I have it with more raw onions like you have here. One of my ultimate favourite meals. It might be shittyfoodporn, but there’s nothing shitty about the flavour in that meal lol
