Sup team.

This is the first time I cooked carbonara with actual guanciale. My gosh is it fantastic. I truly don’t think pancetta or bacon should ever be substituted with this dish. The guanciale makes it perfect.

Also, I red there is some heated controversy over whether carbonara needs a side or not. I decided not to include the chicken cutlets I had with it in the picture, but I would highly recommend cutlets to go with it!

    Looks proper, I’m sure some folks will say “needs more sauce” but this is a proper carbonara well done!

    This looks very well done, just about perfect. I don’t ever have room for any sides, I just eat more carbonara. The only way to make it more perfect (imho) would be to use bucatini if you didn’t. Hard to tell from the photo. Love it when the sauce gets inside the bucatini!
