Making ratatouille gave me the perfect idea to use up a bag of potatoes! No recipe but cooked onion and jalapeño, added plant cream, rosemary, thyme, and tj’s non-dairy cheddar. Baked for an hour foil on, 30 mins foil off at 350° Recorded it all and will be uploading tomorrow if anyone would like to see the process beginning to end

    The only thing I will add if anyone *does* decide to make it, is that a pool of oil did collect at the bottom. I’m suspecting it’s separation from the vegan cheese, so either omit that or tilt the cast iron and drain it (which is what i did lol)
