Basically I sous vide a chuck roast for 36hrs which made it taste like a brisket. (Chuck roast was salted and covered in ground Szechuan peppercorn). Made some homemade fries and a wine sauce thickened both through reduction and some roux. I physically writhed with ecstasy from what I put in my mouth. Holy moly!
