From savory to sweet, this episode has everything you need to make your meals extraordinary. Learn how to prepare tender Lebanese Chicken, a rich and delicious Umm Ali dessert, and a zesty, vibrant Lebanese Tomato Salad that will add the perfect touch to any meal.
Lebanese Chicken
Ingredients:
1 kg Chicken Legs (split into two parts)
¼ cup Oil
1 large Onion (sliced)
1 Cinnamon Stick
6 to 8 Cloves
1 tbsp Black Pepper
6 Green Cardamom Pods
2 Black Cardamom Pods
1 tbsp Whole Cumin
3 tbsp Lemon Juice
2 cups Boiled Rice
1 tsp Salt
Method:
Grind the cinnamon stick, cloves, black pepper, green and black cardamom pods, and whole cumin in a grinder until finely ground.
In a bowl, combine the ground spices, salt, and lemon juice. Rub this mixture thoroughly over the chicken legs.
In a baking tray, layer the sliced onions and place the marinated chicken on top.
Drizzle the oil over the chicken and bake in a preheated oven at 200°C (400°F) for 30 minutes, or until the chicken is cooked through and golden.
Serve the chicken with boiled rice and enjoy!
Umm Ali
Ingredients:
1½ liters Milk
1 pack Cream
1 tin Condensed Milk
1 tin Evaporated Milk
6 Croissants
1 tsp Cardamom Powder
1 tsp Cinnamon Powder
1½ cups Sliced Coconut
1 cup Raisins
⅓ cup Sliced Almonds
⅓ cup Sliced Pistachios
1 cup Sugar
Method:
In a bowl, combine the sugar, milk, cream, condensed milk, evaporated milk, cinnamon powder, and cardamom powder. Mix well.
Slice the croissants and arrange them in an ovenproof dish.
Sprinkle the sliced coconut, half of the almonds, and pistachios on top of the croissants.
Pour the milk mixture evenly over the croissants and soak them well.
Preheat your oven to 200°C (400°F). Bake for 20 minutes, or until golden and bubbling.
Once baked, remove the dish from the oven and sprinkle the remaining almonds and pistachios on top.
Serve warm and enjoy!
Lebanese Tomato Salad
Ingredients:
3 Tomatoes (wedged)
1½ tbsp Sumac (powdered)
½ bunch Parsley (chopped)
½ tsp Salt
6 tbsp Olive Oil
1 tbsp Garlic (chopped)
Method:
In a bowl, combine the wedged tomatoes, sumac, chopped parsley, salt, olive oil, and chopped garlic.
Gently toss everything together to mix evenly.
Serve fresh and enjoy!
