Woke up at 4am to start my 9.5 lbs of pork shoulder to be ready for my kiddos 3rd birthday party this afternoon.

    I am not sure what temp you are smoking at, but it’s okay to up the temp to 250, even 275, for shoulders. I only say this because I have felt pressure when trying to cook for company. The shoulder looks great.

    Quick tip: Put the shoulder on the top rack and put a foil boat underneath it to catch the drippings. It makes cleanup so much easier because these things will grease out the inside of your smoker.

    Hope you plan on lunch after 2PM at the very earliest. If you plan to cook this unwrapped, it’s going to be well into dinner time before it’s ready because of the stall. You can get this done in 10 hours total if you wrap tightly in foil after 5 hours smoke and crank the temp to at least 250-300. The oven works fine too because you don’t add any smoke flavor when it’s wrapped. You can also put it in a crockpot on high for 5 hours with a cup of water. The pork will not be pull apart tender until you reach 205-210 and the probe slides in like room temperature butter everywhere you poke it.
