So to follow up on the thread about favorite pasta brands – I was wondering if you all had any whole grain or “ancient” grain dry pasta brands you recommend. I attended a mini pasta making class near Siracusa – the host expressed the opinion that most dried whole grain pastas you can buy in shops simply don’t and can’t have as nice of a flavor as homemade pasta simply because the bran and its oils start to oxidize very quickly and by the time it is packaged and distributed the oxidation has already been underway for some time. He said that even in Italy, a lot of people avoid dried whole wheat pasta because it tends to taste off at best, and at worst rancid, but people love to make fresh pasta with whole grains.
Despite this – if you have brands of whole grain or ancient grain pasta that have given you good results or have superior flavor – would love to know!
