From crispy mac ‘n’ cheese to creamy mashed potatoes, and a luscious pumpkin cheesecake to golden peach turnovers, these recipes are sure to impress. INGREDIENTS:
***Creamy Mashed Potatoes:
– 5 lbs Russet or Yukon potatoes, peeled and quartered
– 1 1/2 cups whole milk (or half and half)
– 2 frigs of rosemary (optional)
– 4 cloves garlic, crushed or minced
– 1 1/2 tsp kosher salt, or to taste
– 1 stick ( 113g) unsalted butter, melted, plus more to serve
– 4 oz sour cream, or 4 oz cream cheese, softened (optional)
– To garnish: chopped chives, or dried Italian herbs.
***Buttery Garlic Green Beans:
– 2 lbs fresh green beans, washed and trimmed
– 1 Tbsp olive oil
– 1 Tbsp butter
– 1 tsp red chili flakes
– 1 tsp garlic powder
– 1 tsp kosher salt or to taste
– 1/2 tsp black pepper
– 2 garlic cloves, minced
– Water with 1 Tbsp salt for boiling the beans
***Festive Brussels Sprouts:
– 1.5 lbs Brussels sprouts, trimmed and halved
– 8 oz bacon, sliced into strips
– 3-4 Tbsp olive oil, divided
– 1 cup – 100g walnuts
– 1 cup dried cranberries
– Salt and pepper to taste
– 4 tablespoons Blood Orange glaze with balsamic vinegar.
***Crispy-Topped Mac ‘n’ Cheese:
– 16 oz (454g) macaroni
– 2 cups (230g) Cheddar cheese
– 1 cup (115g) Mozzarella cheese
– 1/2 cup (58g) Parmesan cheese
– 2 tablespoons (15g) Flour
– 5 tablespoons unsalted butter
– 1 teaspoon kosher salt or to taste
– 1/2 teaspoon black pepper
– 1/4 teaspoon ground nutmeg
– 1 1/2 teaspoon mustard powder
– 1/2 teaspoon cayenne pepper
– 4 ½ cups whole milk
– 1 large egg
***Pumpkin Cheesecake:
– 12 oz cream cheese, softened (340g)
– 1/3 cup granulated sugar (72g)
– 1/4 cup light brown sugar, firmly packed (54g)
– 1/4 cup sour cream (57g)
– 1 teaspoon vanilla extract
– 2 large eggs
– 1/4 cup canned pumpkin puree (64g)
– 1 teaspoons pumpkin spice or (1/2 tsp cinnamon, 1/4 tsp ground ginger, 1/4 tsp nutmeg)
– 1 teaspoon pumpkin extract (optional)
– 9″ Graham crust
***Flaky Peach Turnovers:
– 1 roll store-bought Puff Pastry 13.2 oz
– 1 can peach pie filling 21 oz
– 1 large egg
– some flour for dusting
Glazed:
– 1/2 cup powdered sugar
– 1 tablespoon liquid (water, milk, lemon juice…)
– 1/2 teaspoon extract for extra flavor (vanilla, almond….)
