Bought a 1.5kg topside roast to Sous vide without giving any thought to marbling, first time doing a big cut of meat, bit of research on the sub & I went for 24hrs at 130F, it was ready about an hour before I was ready to use it, so I wrapped the bag in tea towels & let it rest on the bench before searing on my Weber Q 1 minute a side. OMG it was delicious, so tender & it wasn’t dry at all!
