I have been lurking for a while without ever having smoked anything before. I have picked up a bunch of tips and tricks here and I finally got to put them to good use. I don't own a smoker due to apartment restrictions, but a group of friends and I have a hut in the forrest which has a clay oven. I was thinking that it should have similar heat retaining properties as a kamado grill and I was not was not wrong. I prepared some pork belly with a maple chili rub and propped it up in the back of the oven right under the chimney. Then I built a snake out of coal and put hickory chunks on top. I maybe should have pulled it earlier to wrap and rest, but I wanted to be sure that it's done. It came out great and I will have to do this every time we are at the hut now. It was amazing and the beginning of a new culinary obsession. Thanks again for providing so much inspiration.

    This looks incredible and you did a great job on this smoke! Smoking meats was born out of necessity through ingenuity and you captured the spirit well. I hope get many more delicious meals this way, happy smoking friend!

    Hi there, this smoke looks amazing!!!

    I’m distracted by and want to encourage you and your friends to clean up those piles in the back – hang as much lightweight furniture as you can from the ceiling longs – try and elevate those baskets especially, eliminating any dark areas. Reason = collected ambient moisture will rot them so quickly, as well as provide shelter for rodents, which means – your den turns into a poop fort and no one wants to hang out there. It can be so frustrating to have your awesome shelter ruined by rodents, and fall is prime “lets find a winter-safe-home” time for them. 😬🙏 other than that – you guys seem to have a super dope setup and I hope you continue to have a lot of fun there. Great job on that smoke 💨
