    Recipe – 2 small loaves
    790 g bread flour
    160 g active starter
    550 g warm water
    16 g salt

    Mix. 1 hour rest. 5 stretch and folds 30 mins apart. 4 hour bulk ferment. 12 hour cold ferment. 450 degrees 30 mins covered – 25 mins uncovered.
