If you’ve been here since the beginning of this page, you’ll know this is a firm favourite of ours. It’s the first “fish” dinner I made for us when we moved in together to get Daniel to like fish, and this is now one of his favourite dinners I make!!
We have this on our meal plan all the time!!
For the salmon:
– 2 salmon fillets
– Tsp salt
– Tsp oregano
– Tsp garlic pepper
– Tsp parsley
Evenly add all the seasoning to the salmon fillets and cooked in my @towerhousewares airfryer – I legit don’t use my oven anymore 🤣
For the risotto (for two people):
– 150g risotto rice
– 1 small diced onion
– 2 garlic cloves
– Litre of chicken stock
– 50g sundried tomatoes
– 30g parmsean
– Chopped dill
Start off by gently frying off the shallots and garlic until soft. Then add your risotto rice for a minute or so before adding in the tomatoes(save some to sprinkle on top), then you want to slowly add in your stock, wait for the liquid to be absorbed before adding anymore and repeat until all stock is used up. Once the risotto is almost done, add on the parmesan and dill.
Once the salmon is done flake this up and add on top of the risotto and serve!
I added some broccoli to the side of mine. 😋
