I definitely wasn’t in the mood for it today, but I powered through 💪 Watching anime definitely helped 😊 Sorry about the approximate measurements, I couldn’t be bothered today, so I measured with my heart ❤️

For both lunch/dinner options, I just made one giant batch of steamed veggies and distributed them into each meal: Mushrooms (1 whole Costco pack), 3 bell peppers, 1 whole red onion (a big one)

Meal Option 1: Japanese Hamburger Steaks. These reheat great and make the whole room smell amazing 🤤 They’re so comforting during this time of year.

Steak Ingredients:
1 pack of Costco organic ground beef (1.34lb)
1 egg
1/2 onion, diced
Salt
Pepper

Sauce: I didn’t have ketchup or what’s-her-shirt sauce, so I had to improvise with what I had:
Japanese BBQ sauce (spicy and yuzu flavors, about 1:1 ratio)
About 3/4 cup red wine
About 1/4 brown sugar

Instructions:
Mix all steak ingredients together as if making hamburgers. Form into oval steak shapes and make a groove in the center (so they don’t shrink as much or turn into dense balls). Cook in a pan on medium-low heat, flip when brown color starts to creep up sides of steaks. Poke with a sharp object when you think they’re done, I just see if the juices flowing out of poke hole are clear and not red. (Optional: Just before they’re completely cooked, pour in about 1/4-1/2 cup of red wine and let steaks simmer in wine until completely cooked). Remove steaks, add sauce ingredients to pan, simmer until sauce thickens and can coat back of spoon. Add sauce on top of steaks and done!

Meal Option 2: Spicy Maple Garlic Chicken. They didn’t turn out as saucy as I wanted, so I’ll be tweaking this recipe in the future 🤔

Ingredients:
Chicken Tenderloins from Costco. Maybe about 2 pounds? The bag I used had already been opened.

Marinade: I let them soak for 2-3 hours
1/4cup soy sauce
1 tbsp garlic chili paste
1/4 cup maple syrup
Salt
Pepper

Instructions:
I just took them out of their marinade and pan cooked them till the chicken was done. Nothing special.

Breakfast Burritos: I put these all into one giant ziplock in my freezer, and take out 1 the night before I need it. I reheat them by unwrapping them from their parchment paper and sticking them in a panini press for about 5 min, or however long it takes me to finish up my morning matcha latte 😚 I love the panini press for getting the tortilla a little crispy!

Ingredients (per burrito):
2 eggs
2 slices of turkey bacon
Cheese (placed on bottom, so it’ll be closest to the press and melts easier)
Frozen pre-made hash browns, cut in half long-ways (to fit in burrito easier
Forgot salsa or Bitchin Sauce this time 😣

Instructions:
Just make these ingredients how you like them and assemble into a burrito (don’t judge my eggs, I prefer them a little browned ☺️) Wrap in parchment so they don’t stick together.

Extra snacks for this week:

I made a few cottage cheese and fruit bowls, or I have pears (pictured) for snacks before the gym. I ran out of containers, so that’s why there’s only 3 cottage cheese bowls. No problem with making them the night before tho, it takes like 2min. I also have jerky sticks, some leftover rice, and I can make some Gold Standard protein shakes if I feel like I need it ☺️

Overall it took about 4-4.5 hours. Definitely beats 2 hours every night with cooking and cleanup.

    Next time, make a simple stir-fry with the same vegetables you used today. Slice the onion and sautee in some oil. Add a clove of minced garlic, then add the mushrooms and bellpeppers. Season with salt and pepper (or oyster sauce would be great too).
