haha i had ovens with these exact knobs. I avoided using them whenever possible, they also just sucked and had super uneven heat. If yours is anything like mine keep an eye on things and rotate often. Do the bread test if you can to get a better feel for that specific oven.

He has this vendetta against pastry chefs, so he made a knob that does not specify where the “universal bakers temp” of 350 is at. It is both an extremely elaborate way to get back at his arch enemies, and also a lie that I just came up with. I have no real explanation.

My favorite is that the labels count up by 50, 50, 60, 60, 50. Not only did they fail to label common temps, but they also failed basic math.

I have the same oven! It’s madness. The calibration is off in mine as well. But who cares cuz the numbers are so stupid anyways. I usually set it to 395ish and that seems to be around 350.

I would have to assume it is specialized towards cooking a specific thing and it ended up somewhere where that task has been forgotten

My skeptical old ass would assume that since none of these temps are ones anyone wants, they’re your only choices so you can never precisely select what you need, thereby deflecting liability for your burned muffin that needed to be baked at 350.

Last place I was at had new ones, megali I think was the brand. We only used it to warm bowls for pasta and if you didn’t turn it up high enough the pilot would go out if not, they wouldn’t get warm enough or to hot to use. This knob would make this even worse to use
