I have this dude Tom who comes in every day that has me cook either filet or Burger. Literally 20 seconds on each side and that’s almost too much. He’s an old man there’s no way his digestive system is working properly. He’s a straight-up asshole too and only lets me cook for him. He gets mad at the staff if I have a random day off out of the norm.

Before going full vegetarian, we personally didn’t care how high a pedestal a restaurant puts their hamburger on; well-done always. Ground beef (all that bacteria growing surface area) undercooked was the reason for our last bought of food poisoning (and likely one of the big reasons we went full vegetarian).

As a Canadian we cook all burgers well done. Unless you are grinding the meat yourself daily in small batches. Like almost all burgers come frozen, or are made from factory ground beef, so well done. Americans do not like it, and always complain about the food safety laws.

I usually don’t order steaks at restaurants, as I can’t justify paying those prices when they’re so easy and fast to make at home (I know the price isn’t based off of difficulty in cooking but meat prices in case anyone replies with that).
But if I do, my fiance asks for the same thing, as rare as you are allowed to “cook” them.
I usually just sear each side for 30-45 seconds for her when I cook them at home.

I had a pretty regular takeout customer years ago who would order extra rare burgers. Eventually that order morphed into requesting the burger only be seared on one side, so that he could go home and finish cooking it to his liking, rather than risking it steaming/overcooking in the box while he drove home.
